Muffins aren’t just for breakfast anymore. Replace the sugar with cheese, spices and green onions and you have a great alternative to dinner rolls or biscuits. Dinner muffins don’t require rising time or fussy shaping. Just combine the flour and dry ingredients in one bowl, whisk the milk, melted butter and egg in a second bowl, and then gently stir the dry and wet ingredients together. The batter will be ready in the time it takes to preheat the oven.
Savory Cheese Muffins (Makes 12)
3 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/4 teaspoon cayenne pepper
1 cup crumbled blue cheese
2 green onions, chopped
1-1/4 cup milk
3 tablespoons unsalted butter, melted
1 large egg, beaten
3/4 cup sour cream
1/2 cup shredded Parmesan cheese
Adjust rack to middle position and heat oven to 350 degrees. Coat regular 12-cup muffin tin with nonstick cooking spray.
Whisk flour, baking powder, salt, cayenne, and pepper together in large bowl. Mix in blue cheese and green onions, breaking up any clumps, until cheese is coated with flour. Whisk milk, butter, egg, and sour cream together in medium bowl. Using rubber spatula, gently fold wet ingredients into dry ingredients until just combined (batter will be thick and heavy). Divide batter among muffin cups. Sprinkle Parmesan over batter in each cup. Bake until light golden brown and toothpick inserted in center of muffin comes out with a few crumbs attached, 25-30 minutes. Cool in pan on wire rack for five minutes. Serve warm.
